Vegetable Stir-fry Fettuccine

I had no idea what I wanted to cook for dinner, all I knew was that I wanted stir-fry and to imitate lo mein without having all of the soy ingredients. As I sat down to eat this, it was a must that I share my recipe with you all.


– Noodle of your choice (preferably lo mein, but I chose fettuccine)

-Vegetables of your choice (I chose corn, carrots, broccoli, and green peas

– Corn starch

– Pineapple chunks

– Chicken (I chose vegetarian “meat”)

– Stir-fry sauce

– Soy sauce

– Oil

– Sugar

– Green and red peppers

– Salt

– Season (optional)

DSC_0450 (4)I boiled the vegetables until they were ready. Afterwards, I drained them and set them aside.

In a medium pan, I boiled the fettuccine. After it was ready, I drained it. So that the noodles won’t stick together, I poured cold water onto the noodles then set it aside as it drained.

DSC_0449 (4)In a separate bowl, add the corn starch to the chicken.

While the stove was set to medium, I added oil to a pan. Then I add the peppers, vegetables, and pineapple chunks. After 5 minutes, add the chicken. Cook for 5 minutes, then add the stir-fry sauce. Continue to cook for 5 more minutes.

Once the stir-fry was done, I set it aside. In a wok, I added oil until it was hot enough to pour in the spaghetti. Afterwards I added more stir-fry sauce, a tablespoon of sugar, salt, season, and a spoonful of pineapple juice. Once the fettuccine turned a brown color, I mixed in the stir-fry with the fettuccine. I continued to mix everything for about 5-10 minutes.
