My first attempt at making baked potatoes…. this was really delicious! I spread butter on the inside while it was still hot. Then, I stuffed it with vegan “ground beef”, corn, chopped cherry tomatoes, shredded cheese, and shredded lettuce.
I made pasta as well. The other one on the right had less cheese.
My little sister requested a potato and egg salad, so I made that as well.
Before becoming a vegetarian, I used to hate salad. Now, I crave it. Look at how that turned out. I put vegan “chicken”, cherry tomatoes, lettuce, and then topped it off with lemon juice, Light Italian dressing, thousand island dressing, and then sprinkled parmesean.
