Vegetable Soup For the Animal Lover’s Soul

Substitution is my favorite thing to do as a vegetarian/vegan! I have cold and my throat is inflamed. These coughs are no joke! Today I woke up with a mild sore throat and could not even swallow my vitamins, which meant I would not be able to eat solid foods.

I looked through my kitchen for soup, however because I am the only vegetarian in my family everything had animal products in it. I could not go to a grocery store and purchase vegetable soup, so I came up with a brilliant idea to save a few dollars and cook my own with the items I had in my kitchen!

Substitution & meals on a budget; now we’re talking my language. Praise break, anyone?

In separate smaller pots I boiled 1 potato, a bit of frozen spinach, peas, and ziti. Once they were ready I drained each then combined them together in a larger pot with vegetable broth.
At first, I thought about boiling it just as is. However it did not look pleasing to eat. I decided to add a few seasoning. I’m west indian, I love flavor!
Added tomato sauce and more season. After I was satisfied with the taste, I put on a lid to simmer on the lowest heat for 10 minutes.

Voila! Sooo yummy! I added hot sauce as well. This is 100% vegan friendly.
